Ingredients

  • 1 med carrot, shredded into 'noodles'
  • 1 large zucchini, shredded into 'noodles'
  • 1 can tuna in extra virgin olive oil or brine, drained
  • 1/2 cup ricotta cheese, drained
  • 1 tbsp honey
  • 4 tbsp extra virgin olive oil
  • 1 tbsp grated ginger
  • 1 tsp dried parsley
  • 2 tbsp lemon juice
  • 1 -2 tbsp Dijon mustard
  • Salt and pepper to taste.
  • Chopped green onions for garnishing
