  • 250 ml (1 cup) fresh milk
  • 3 Thai tea bags
  • 65 g unsalted butter
  • 60 g cake flour
  • Pinch of salt
  • 4 egg yolks (I use XL size eggs, around 65-70g)
  • 4 egg whites
  • 80 g caster sugar
