  • 4 Chicken thighs, bone in,
  • 3 packets of Keto rice
  • 1. Marinate the chicken thigh with grated garlic, smoked paprika, chili powder, cumin powder, salt and black pepper for at least 30 mins.
  • 2. In a frying pan, heat a knob of butter over medium
  • 3. Cook for 10
  • 4. In the same frying pan, over medium
  • 5. Then return the chicken thighs into the pan, together with the quartered bok choy, placing directly onto the Keto rice. Cover and cook till boy choy has wilted but still crisp.
  • 6. Garnish with coriander leaves and serve directly with lime wedges.
