I tried to bake this condensed milk cottoncake recipe adapted from Little Blue's Kitchen, but with modification of the ingredients and the cake turned out not only light, soft and fluffy and even flexible too
Shake it lightly to remove the larger bubbles. CottonCake. Sieve the cake flour and set aside. Remove from flame before adding in the sieved cake flour and stir the mixture quickly to form a dough
【Yogurt Chiffon Cake】. Combine egg yolks, sugar, corn oil and yogurt in a mixing bowl. Fold in cake flour, mix until there are no more lumps and forms a smooth batter, set aside
Sponge cake. Sponge cake. Pour cake batter into meringue and fold till just incorporated. Pour cake batter into prepared pan, smooth surface and tap pan on tabletop to burst air bubbles
Lightly tap cake pan on counter top to release air bubbles. Lightly beaten egg yolks using a hand whisk, combined with coconut milk and pandan extract, mix well
Pour cake batter into meringue and fold till just incorporated. Pour cake batter into prepared pan, smooth surface and tap pan on tabletop to burst air bubbles
I used it very often in my baking as you can see in these recipes like the 'LightCottonYogurtCake', 'Easy Chocolate Yogurt Muffins', 'Matcha Tofu Cheesecake' and 'Lemon YogurtCupcakes'
