  • 340 g plain flour
  • 68 g icing sugar
  • 170 g salted butter, cut into cubes, cold
  • 4 egg yolks (small size)
  • 1 - 1.5 tsp fresh milk
  • 250 g cream cheese (Philadelphia brand)
  • 105 g cream cheese (kiri brand, 3 pieces)
  • 40 g cheddar slice (President brand, 2 slices)
  • 20 g Emmental slice (President brand, 1 slice)
  • 130 g mascarpone cheese
  • 50 g salted butter
  • 260 g fresh milk (Hokkaido fresh milk)
  • 78 g icing sugar, sifted
  • 30 g corn starch, sifted
  • 2 eggs (regular size)
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • Sea salt, to taste
  • 1 egg yolk + milk (mixture for brushing on top of custar)
