Fried Tom Yum Spaghetti

Ingredients

  • 8 servings of pasta, cooked in salted water until al dente, drained, and coat it with 1-2 tbsp oil so it doesn't stick
  • 1 can of straw mushroom, drained and halved
  • 1 cup cherry tomatoes, halved
  • 25-30 fresh shrimp, cleaned and shells removed
  • 1/2 cup fresh basil leaves
  • 1/4 cup chopped parsley for garnish
  • Salt and pepper to taste
  • Lime wedges to serve
  • 3-4 tablespoons of tom yum paste (Add more or less to taste)
  • 1/4 cup hot water
  • 4 tbsp canola oil, divided
