So here is my EarlGrey Nama Chocolate recipe adapted from a Chinese cookbook 烘焙新手. The recipe is very easy to follow and the taste is very unique, with a hint of EarlGrey tea and honey in the chocolate

Stir fresh milk and earlgrey tea leaves over simmering water till release the flavour of tea. Ingredients:3 egg yolks20g sugar40g vegetable oil40g honey earlgrey tea (4g earlgrey tea leaves in 50g hot milk + 1tbsp honey)60g low protein flour or cake flour4 egg white45g sugar.
