  • 200 g prawns, shelled and deveined, pat dry with kitchen paper
  • 1/8 tsp salt
  • dash of pepper
  • 200 g fish paste
  • 1/2 tsp ginger juice
  • 1/2 tsp chicken powder
  • 1/2 tbsp Chinese cooking wine
  • 1 tsp sesame oil
  • 1/2 tbsp corn oil
  • 1/2 tbsp corn flour
  • dash of pepper
  • 1/2 tbsp each finely cut spring onion and coriander leaves
  • 8 slices of white bread, crust discarded and cut to small cubes
