Ingredients

  • 9 buns
  •  
  • - bread dough
  • 250 g bread flour
  • 50 g cake flour
  • 30 g caster sugar
  • 1/2 teaspoon salt
  • 3 g instant yeast (about 1 teaspoon)
  • 1 egg lightly beaten (about 55g without shell)
  • 80 ml milk
  • 100 g tang zhong (water-roux)
  • 30 g unsalted butter (cut into cubes)
  •  
  • for the filling
  • 1.5 tablespoons curry powder mix with 3 tablespoons water to form a smooth paste
  • 1 medium size yellow onions, chopped
  • 2 sprigs curry leaves
  • 1 tablespoons oil
  • 200 g chicken breast, cubed
  • 2 large potatoes
  • 1/2 teaspoon salt
  • 5 tablespoons water (add more water if necessary)
