Ingredients

  • 3 cake tins so you get 3 cake layers. When they come out of the oven, they are usually slightly dome on the top.
  • Chocolate Cake (Makes a 7" cake)
  • 1 3/4 cup cake flour
  • 1 teaspoon salt
  • 2 cups castor sugar
  • 3/4 cup boiling water
  • 1 ) Preheat oven to 175 deg Celsius.
  • 1½ teaspoons peppermint extract
  • a tiny drop of green food coloring ( I use Wilton edible food gel in Kelly Green)
  • 7-9 squares of After eight mint, cut into small pieces
