Ingredients

  • 5 russet potatoes, wash and peeled
  • 1 medium yellow onion, sliced length-wise
  • 150 g shredded cheddar
  • 150 g mozzarella cheese
  • 200 g bacon, sliced
  • 3 tablespoons plain flour
  • 4 tablespoons salted butter
  • 450 ml fresh milk (not low fat)
  • Salt and coarse black pepper to taste
  • Handful of chopped spring onions
