Ingredients

  • 2 lb of chicken thigh or chicken drumstick cut into half palm size
  • 1 tsp salt or to taste
  • 2-3 sprigs of curry leaves
  • 2 thumb size of fresh turmeric or use 1 heap tsp of turmeric powder
  • 2 sticks of lemongrass (remove outer layer and use only the white part)
  • 1 thumb size of galangal
  • 1 thumb size of ginger root
  • 2-3 cloves of garlic
  • 2-3 shallot
  • 1 tbsp of coriander powder
  • 1 tsp of cumin powder
  • 1/4 tsp of chili powder
  • 1. Clean and cut the chicken into 1
  • 2. The next day, before frying, add all the curry leaves and mix well with the chicken.
  • 3. Heat up about 2 inches of oil in a cooking wok
